Upper Elvo raw milk butter is a true Slow Food masterpiece, that comes from beautiful Biella province, from Upper Elvo valley. This unique and very rare butter is produced by 3 small local families protected by Slow Food organisation. The butter is exclusively made from alpine summer milk in ancient stone huts. According to old traditions, butter is still kept in fraidel, the dialect name for the stone tanks inside the houses fed by the gelid spring water.
The centuries old butter production uses Pezzata Rossa d'Oropa cows - it's an acient breed. The cows are 100% grass-fed year around. They are pasturing in freedom and enjoying the pure alpine grass, herbs and flowers. Grazing takes place in clean and rich environment that provides the most healthiest "superfood" and the mineral-rich mountain streams of water. The butter is rich in vitamines, minerals, omega-3 and CLA. Animals are free of antibiotics and hormones.
The producers have preserved the old wooden butter molds, which they use to imprint on the butter pats the symbols historically used to identify which family produced them: flowers, animals or initials.
The raw butter stays fresh for 4 weeks. Keep it in the coldest area in your fridge. If you prefer to preserve it for longer time, you can keep it in deep freeze for 3-4 months.
