The polyphenol level and color during the growing season (photo below). ( It depends also on the soil, age of trees, altitude, microclimate and character of annual vintage.)

When olives are green, unripe, the polyphenols are in the middle of development. The picking time of the olives needs a true skill, picking too early or too late can be crucial.
